Dolce Cate is a rare and contemplative Verdicchio passito, produced only in the best vintages. The grapes dry on the vine, then ferment and age for a long time in old casks, where maturation defines its depth and harmony.
In the glass it shows a lightly amber yellow color, with notes of dried fruit, figs, apricot and delicate spices, enriched by a subtle oxidative hint. The residual sugar is measured and balanced by pleasant freshness.
Produced in very limited quantities, it pairs beautifully with aged cheeses, dry pastries and tarts, or as a meditative after-dinner wine, served slightly chilled.

WINE MAKING AND REFINEMENT
Grapes naturally dried on the vine, harvested between late October and early November. Off-the-skins vinification, cold settling of the must, fermentation in small oak barrels at ambient temperature and ageing in the same barrels for approximately 24 months, followed by a further 4 months of bottle refinement.
